As a registered dietitian and ultralight long-distance backpacker, I created Backcountry Foodie™ while preparing homemade, lightweight meals for my thru-hike of the PCT in 2017. Recipe development and testing continued while hiking a section of the AT followed by thru-hiking the Oregon Coast Trail in 2018.
